Financier alle nocciole


Bisogna lasciare la ragione agli altri...

I Finacier sono dei pasticcini contenete polvere di mandorle...
A volte vengono chiamati Visitandine in alcune pasticcerie che conservano l'appellativo tradizionale...


Secondo la leggenda questi dolcetti sono stati inventati da un pasticcere francese, un certo Lasne, per consentire agli operatori finanziari di gustarli senza sporcarsi le mani....
Per altri deriva dallo stampo rettangolare che ricorda un lingotto d'oro...
Un'altra teoria sostiene che questo dolce è diventato popolare nel quartiere finanziario di Parigi vicino alla Borsa del Commercio...

Ed ora, dopo questa nota introduttiva ecco la ricetta davvero facile da eseguire ed ottima soprattutto per far fuori gli albumi avanzati da altre preparazione e che stazionano in frigo....

Tempo di preparazione: circa 20'
Costo: medio
Difficoltà:*

INGREDIENTI
130 gr di albumi
50 gr di nocciole
100 gr di burro
100 gr di zucchero 
70 gr di farina 00

Porre nocciole e zucchero nel mixer e frullare fino ad ottenere una polvere fine...


Aggiungere la farina e azionare il mixer per pochi secondi....


Trasferire il tutto in una scodella ed unire i bianchi montati solo fino a quando sono diventati schiumosi....


Mescolare con delicatezza con una spatola di silicone....


E, per ultimo, il burro fuso e appena tiepido....


Ora ottenuta una massa ben omogenea versarla a cucchiaiate in uno stampo come quello che appare qui sotto, porzionandola equamente tra i "vani" dello stesso...


Dare qualche colpetto di assestamento sul piano di lavoro....


Quindi infornare in forno preriscaldato, ventilato con il termostato impostato sui 180° per circa 20'....


Far raffreddare perfettamente i piccoli "lingotti" prima di sformarli....


Io li ho regalati alla mia carissima amica Erminia che li ha conservati in frigo ( le avevo portato anche degli altri dolci) e si è premurata di telefonarmi per dirmi che le erano piaciuti moltissimo..
Infatti dalle mia " cavie" non aspetto solo degli apprezzamenti ma mi interessano soprattutto le critiche!!

Mi piacciono moltissimo ed ho per l'appunto degli albumi in frigo che aspettano di essere consumati...ma non ho lo stampo...manaccia,devo inventarmi qualcosa!
