In cucina si va spesso a periodi.........per quanto riguarda i dolci......
C'è quello dedicato alle crostate........se si hanno delle marmellate da far fuori......
Quello che prevede i plum cakes......che sono ideali per la forma...sono infatti facili da porzionare.....
Poi c'è il periodò dei muffin ..piccole delizie dai mille aspetti e gusti.......
E poi c'è quello dedicato ai biscotti: in alcuni periodi dell'anno la produzione è massiccia...specie quando rappresentano oggetto di regalo......
Io preferisco quelli semplici senza decorazioni......
La loro preparazione ha esaurito la mia dose di pazienza.......
Quindi al massimo li posso pennellare con del cioccolato (l'ho fatto solo in un caso) ......
In questo post propongo questi che sono stati realizzati in due modalità diverse.....
Per alcuni ho versato l'impasto nei pirottini allungati e grandi...e loro si sono allargati quanto hanno voluto.... per fortuna non sono debordati.....
Per gli altri ho versato l'impasto negli stampi al silicone della Silikomart e hanno assunto un aspetto meno "sdravaccato"........
Però sempre biscotti sono anche se un po' grandini.....

INGREDIENTI
110 gr di uva passa
150 gr di zucchero di canna
30 gr di zucchero semolato
110 gr di burro
300 gr di farina 00
1 bustina di lievito per dolci
1 pizzico di sale
1 cucchiaino tra cannella e noce moscata
il succo di 1/2 lime
2 uova medie
poco latte

Li ho definiti rustici perché lo zucchero di canna li rende tali......piacevolmente granulosi.....
Ecco qui sotto il lime...ma se non ne avete va bene anche il limone......
Cominciamo col setaccciare due volte la farina con il lievito, la cannella, la noce moscata e il pizzico di sale.....
Versare il tutto in una scodella e mescolare con l'uvetta precedentemente ammollata in acqua tiepida e tamponata con carta da cucina.....
Montare con le fruste elettriche il burro morbido con i due tipi di zucchero ......
Unire le uova una alla volta, poco latte e il succo di mezzo lime......
Ora versare il composto liquido alla farina mescolando con cura ......
Io avevo questi pirottini che mi sono sembrati adatti all'uopo ma come si vedrà in seguito si sono allargati ........
Una parte dell'impasto è stato versato a cucchiaiate anche in questi stampi della Silikomart .....
Sia gli uni che gli altri non hanno bisogno di alcuna preparazione preliminare......
Riempirli un po' meno di quanto ho fatto io........
Appare evidente che tendono a "crescere"......
Infornare ora in forno preriscaldato e ventilato a 170° per circa 10'.....
Ricordo che i biscotti di qualunque genere vanno controllati a vista e consiglio anche di fare un'infornata per volta......
Considerato il breve tempo di cottura non si spreca troppa energia elettrica.....
Far raffreddare i biscotti nelle teglie e poi delicatamente sistemarli in scatole di latta......
Non hanno un aspetto particolarmente bello ma sono ottimi......
